Pedro has refined this Pacas lot to showcase the vibrant stone-fruit clarity that has made his farm a standout in the Santa Barbara region

The region

El Cedral is tucked away in the high-altitude mountains of Santa Barbara. This region is unique in Honduras for its "Colombian-style" profiles – bright, floral and fruit-forward. The cooling influence of nearby Lake Yojoa and the 1,750 MASL elevation slow the ripening of the cherries, resulting in a dense fruit with concentrated sweetness.

The process

Pedro uses a traditional washed method, beginning with a manual harvest and same-day pulping. The coffee undergoes a 15-hour dry fermentation before being washed clean with fresh water. To finish, the parchment is dried slowly on raised beds inside solar dryers for up to 15 days. This controlled environment protects the beans from the elements and ensures a crisp, clean cup profile.
