Camelia's coffee is handpicked and transported by cable cars to the top of the road. It is then delivered to La Joyería, the family's mill.
Each lot consists of 48 hours of picking. The second day's coffee is added to the first after 24 hours of fermentation and left to ferment for another 24 hours. This raises the pH level of the tank, allowing longer fermentation without acetic acid.
The result is a clean cup profile with notes of red plums, currants, and dark chocolate.
