The region

Huila is one of Colombia’s most celebrated growing regions. Nestled between the Andean ranges, its high-altitude farms benefit from nitrogen-rich volcanic soil and a climate that encourages slow cherry maturation. This extended growing cycle is key to developing the complex sugars and bright acidity that define the best Huila micro-lots.

The process

Producers begin with selective manual picking, followed by an in-cherry fermentation for 24 to 36 hours. After pulping, the coffee undergoes a secondary fermentation for 24 to 50 hours before being washed. The beans are then dried in a two-step process: first in the shade to drain excess water, and then in a covered space for 15 to 25 days until they reach ideal moisture levels.
