This coffee is a fruity Castillo variety cultivated in the town of Ataco, Tolima. The farm, Finca Monte Frio is owned by the Rivas family, with 40 hectares of land dedicated to coffee production. Situated at an altitude of 1,680 meters above sea level, the farm benefits from ideal conditions for coffee plantations.

The Rivas family are selective in their cherry-picking, choosing only ripe and red cherries for their five-day anaerobic fermentation processing. This results in a vibrant and flavourful profile, characterised by citrus, green grape, and stone fruit notes.

Despite the challenges of its past, Tolima has emerged as the third-largest coffee-producing region in Colombia, with producing organisations like the Rivas family playing a vital role in transforming their local communities and offering new opportunities for development.
