Smallholder farmers selectively handpick ripe, red cherry and deliver it to the Joyabaj wet mill. The cherry is then rested for 8 hours for a light fermentation, which adds additional fruity flavours to this natural lot, developing a deliciously rich and fruity coffee with notes of papaya and passionfruit.
